Lion's Mane and Blue Oyster every week for restaurants and home cooks, plus Shiitake and King Trumpet when the weather cools down.

Lion's Mane
Our pride and joy. Shaggy, sweet and tender, grown right here in Austin.
Nutrition: B vitamins, vitamin D, fiber, protein, essential amino acids.
Try it: Mock crab cakes or jerk-style “chicken”.

Blue Oyster
Velvety and savory with big, beautiful clusters. A great first mushroom to cook with.
Nutrition: Zinc, potassium, selenium, B vitamins.
Try it: As a meat swap, or tossed in pasta.

Shiitake
Rich, smoky and meaty. Grown November through March, and the chefs we grow for put it on everything.
Nutrition: B vitamins, copper, selenium, fiber.
Try it: Stir-fry, ramen, or roasted until crispy.

King Trumpet
Thick, meaty stems that hold up to high heat.
Nutrition: Zinc, potassium, selenium, B vitamins.
Try it: Teriyaki style or pan-fried like scallops.
